Spaghetti Bolognese

There will be warm tummies and happy faces all around when you serve a hearty meal of Spaghetti Bolognese made with Grandma’s Frozen Spaghetti Noodles. Add slices of crunchy bread to scoop up every drop!

SPAGHETTI  BOLOGNESE

Level: INTERMEDIATE
Prep time: 15 minutes
Inactive Prep time:  3 hours
Cook time: 10 minutes
Serves: 4 servings plus enough sauce for 2 more meals! (Cut recipe in half for single meal.)

INGREDIENTS:
Bolognese Sauce:
Extra-virgin olive oil
2 medium onions, finely chopped
4 stalks celery, finely chopped
4 carrots, peeled and finely chopped
8 large garlic cloves, minced
2 pounds ground Italian sausage (Polidori or Boulder are Colorado proud products!)
2 pounds ground beef
4 oz. Pancetta or Prosciutto, chopped
2 cups dry white wine
1 (14.5-oz) can Muir Glen fire-roasted diced tomatoes, drained
2 quarts chicken or beef stock
Kosher salt and freshly ground black pepper
1 tablespoon Fennel seed (optional)
2 cups milk
2 (11-oz) packages Grandma’s Frozen Spaghetti Noodles
¼ cup smoked paprika
Handful freshly grated Parmesan cheese
Handful fresh basil leaves, torn into small pieces

DIRECTIONS: 
In a large heavy bottom pot, heat a 2-count (1/2 oz) of olive oil over medium heat. Add onions, celery, carrots, and garlic, and cook for about 10 minutes, stirring, until veggies are tender but not browned.

Break up sausage and beef into clumps and add to pan along with chopped Pancetta or Prosciutto. Increase heat some and cook until meat is no longer pink, breaking up chunks into small pieces with a wooden spoon. Add wine and simmer until almost evaporated. Add tomatoes, meat stock, fennel seed, smoked paprika and salt and pepper to taste. Lower heat and simmer very slowly for 2 – 2 ½ hours, stirring occasionally, until sauce is very thick. Add milk and simmer again another 30 minutes. Add any additional seasoning to taste. Transfer half of sauce to containers and refrigerate up to a week, or freeze for several months.

Prepare Grandma’s Frozen Spaghetti Noodles according to package directions. While noodles are cooking, return sauce to a simmer and stir in smoked paprika. Drain spaghetti and place in a large pasta bowl. Pour sauce over spaghetti and toss. Garnish with handful of grated Parmesan cheese, the basil, and drizzle of olive oil. Serve with more grated cheese at the table.
