Turkey Noodle Soup
Suggestions: If you have had it with turkey now,
freeze the stock and a little of the meat to make soup later.

Turkey always adapts well to any chicken dish. Just freeze
2 cups of turkey pieces with a little broth, add our noodles
and you have a quick and easy new dish a couple of months
later. Really good when you’ve been out playing in the snow
with friends and family and can come in to a tummy warming
comfort food waiting for you in the oven!!!!

After your family has picked the turkey clean, return the
carcass to the roaster leaving all the drippings in the roaster,
add 3 qts water and simmer (covered) for 1 hour. Pour all the
broth thru a colander into a tall cooking pot and let settle for
10-15 minutes. Skim off fat and discard. This will make a very
rich stock for a great Turkey noodle soup.
Now add:
2 cloves garlic, minced
3 carrots, sliced
1 large onion, chopped
1 small package of frozen peas
4 ribs of celery, chopped
3 Tbs parsley
1 16 oz pkg GRANDMA’S Frozen Wide Egg Noodles, thawed
according to package directions
Salt and Pepper to taste
Simmer all together for 12 minutes or until desired doneness.
Pick any remaining meat from the bones and add to the soup,
making sure soup reaches boil once again after adding meat.
Please remember the noodles will continue to cook as long as
the soup remains real hot. |
