Cold Chicken Nicoise
Make this luscious salad ahead of time and let
chill for 2 hours before serving your ladies luncheon.
1 lb cooked chicken, shredded or diced
4 Tbs capers with juice
¾ cup reduced fat mayonnaise
salt and freshly ground pepper to taste
2 Tbs chopped fresh dill (or 1 Tbs dried)
½ to 1 lb grape tomatoes
1 jar of marinated Artichoke hearts with juice
1 11 oz pkg GRANDMA’s Noodles
Fresh dill sprigs for garnish
Mix all ingredients except pasta and garnish.
Cook pasta per package directions plus 3 minutes,
rinse in cool water and drain. Put all together in large
bowl and toss gently. Garnish with fresh dill sprigs.
May be chilled or served immediately.
If chilling, reserve small portion of liquid to put on
salad just before serving as noodles will absorb the dressing.
For added fancy you can add asparagus spears
cut in one inch pieces. If you like your salad more tangy
than creamy, add 1 to 2 Tbs of a flavored vinegar. |
